Quinoa Pizza Bites
2 cups cooked quinoa
2 eggs
1 cup chopped onion
1 cup shredded mozzarella cheese
2 tsp minced garlic
1/2 cup fresh basil chopped
1 cup chopped pepperoni slices (1/2 a 7 ounce bag)
1/2 tsp seasoning salt
1 tsp paprika
1 tsp dried crushed oregano
pizza sauce for dipping

1. Preheat oven to 350 degrees
2. Mix together all ingredients except pizza sauce
3. Press mixture into sections of a greased mini muffin tin
4. Bake for 15 – 20 minutes
