Peanut Butter Pumpkin Chocolate Chip Bars

1 can of pumpkin
1 cup coconut or almond milk
1 cup natural peanut butter (you can substitute 1/2 c applesauce for less calories)
1 cup coconut flour or whole wheat flour
1/2 cup Xylitol (or other sweetener)
1 tbsp cinnamon
1 tsp baking soda
1/2 tsp ginger
1 cup Greek yogurt
Dark chocolate chips (switch out or add unsweetened coconut flakes)
Bake for 20-30 minutes at 350 degrees, depending on oven

Toasted Coconut and Vanilla Protein Bars
1. Mix Together all ingredients except chocolate
1/2 cup vanilla IsaPro protein powder
1/4 cup of flaked coconut (unsweetened)
1/4 cup coconut flour
1/4 cup coconut milk
30 g melted 85% dark chocolate
2. If too sticky add extra flour until the consistency is easy enough to form
3. Melt chocolate and coat bars
4. Cool or freeze and enjoy
