Crock Pot Meals

Quinoa and Bean Chili

Add all ingredients into a slow cooker for eight to ten hours on low or four to five hours on high. Add bay leaf and stir well before serving.

1 cup red quinoa, uncooked
(2) 15.5 oz cans red kidney beans
(2) 15.5 oz cans diced no-salt-added tomatoes
2.5 cups of water
1 medium onion finely chopped
1 green bell pepper finely chopped
1 jalapeno pepper seeded and minced
1 bay leaf
2 tbsp finely chopped sun-dried tomatoes
2 tbsp olive oil
1 tbsp tomato paste
1 tbsp vegetable bouillon
1 tbsp lemon or lime juice
1 tbsp honey
2 tsp ground cumin
2 tsp dried oregano
1 tps garlic powder
*Ground turkey is optional

Easy Crock Pot Chicken
4 chicken breasts
1 can low sodium cream of chicken soup
1 can water (measured in soup can)
Ground Pepper
Garlic Powder

1. Place chicken breasts in medium crock pot along with soup and water.
2. Add pepper and garlic powder to taste
3. Cook on low 4 – 6 hours or until chicken is completely cooked
4. Pull chicken apart with fork until shredded
5. Eat alone, or with whole grain bread, in a whole grain wrap or served cold over a salad
